Mexican vanilla ice cream with a homemade blackberry swirl.

Vanilla is one of my favorite flavors, and this Mexican vanilla is no different. Vanilla is just as complex as coffee, the flavor profile changes depending on where it’s grown.

Then on top of this amazing Mexican vanilla, I swirled in my homemade blackberry swirl. To make this, I took blackberries, and cooked them down with sugar, lemon juice, and my secret ingredient. I guess it’s not so secret now that I’m about to tell you what it is though… black pepper! It makes the blackberry ripple taste very well rounded with a sweet taste, sour notes, and spicy under tones.

The name Hippo Ripple actually comes from Hutto. I made this flavor specifically for the Hutto American Rhapsody 4th of July festival, and Hutto loves Hippos. They have a long history with the animal, and so I wanted to pay homage to that.

 

Ingredients: Ice Cream Base (Cream, Milk, Skim Milk, Sugar, Corn Syrup Solids, Nonfat Dry Milk, 2% or less of Mono & Diglycerides, Cellulose Gum, Guar Gum, Carrageenan), Blackberries, Sugar, Lemon Juice, Vanilla Extract, White Pepper.
